Chicken Schezwan

Ingredients:

For Marination:
Boneless chicken breast pieces - 600 g
Corn Flour - 3 tbsp
Maida - 1 tbsp
Onion(big) - 1(finely chopped)
Egg - 1
Ginger paste - 1 tsp
Garlic paste - 1 tsp
Soya sauce - 1 tsp
Salt
Refined oil

For Frying:
Celery(along with stem & leaves) - 3 tbsp(finely chopped)
Garlic - 3 tbsp(finely chopped)
Green Chilies - 1 tsp(sliced)
Dried Red Chilies - 4
Red Chili paste - 1 tbsp
Soya Sauce - 1 tsp
Chili Sauce - 2 tbsp
Tomato Sauce - 1 1/2 tbsp
Vinegar - 1 tsp
Sugar - 1/2 tsp
Water - 1/2 cup
Salt

Instructions to prepare:

Marinate the chicken pieces with ginger paste, garlic paste, soya sauce, egg and required salt. Mix well. Add corn flour, maida and combine all the ingredients well by hand. Set it aside for 10-15 minutes.
Heat any refined oil in a pan and deep fry the marinated chicken pieces batch wise till golden brown colour is achieved. Drain the oil and transper it to a plate.

Take 3 tbsp of the same oil in another wok/pan and heat it. Add celery and chopped garlic. Saute it well till it becomes brownish. Add sliced green chilies & dried red chilies. Add onion & saute till its colour changes. Add red chili paste. Saute till the raw smell goes. Add the sauces and mix well. Add vinegar & salt. Add 1/2 cup water to it & stir well. Then add the fried chicken pieces.

Make the chicken well coated with the masala.
Remove from flame & transfer it to a serving dish.
