Caramel Bread Pudding

Ingredients:

Sweet Bread - 4 slices(crumbled)
Sugar - 3 tsp
Vanilla Essence - 1 tsp
Milk - 1 cup
For caramel Sauce:
Sugar - 3 tsp
Water - 2 tbsp

Instructions to prepare:

Take a wide bowl and add the bread crumbs. Pour the milk and 3 tsp sugar to it. Mix and mash it well. Then add vanilla essence, mix well and set it aside. Add 3 tsp sugar and water in a pan and heat it over medium flame. Give a slight stir to avoid sticking with pan. Once the sugar is melted, lower the flame and give a stir. Once it reaches a golden brown color after bubbling, remove from flame. 
Caramel sauce gets ready. 
Pour this sauce immediately on to a pudding plate and make it spread completely at the bottom of the plate. Then, add the early prepared bread mixture to it. Cover with an aluminium foil which has few holes for the steam to escape. You can also use plantain leaf for this.
Take a pressure cooker and add 1/2 cup water to it. Heat it and let the water boil. When it starts to boil, place the covered pudding plate inside the cooker and cover with its lid. Steam for 15-20 minutes without placing the weight. Once pressure is released, remove from flame and allow it to cool. Then keep it refrigerated for 1-2 hours and then cut into pieces of required size. Serve with caramel sauce.

Chocolate Bread Pudding

                      

Ingredients:

Bread slices - 6(crushed by hand)
Milk - 1/2 l
Egg - 2
Sugar - 1/2 cup
Dark Chocolate - 100 g
Vanilla essence - 1 tsp

Instructions to prepare:

Add the bread crumbs to a bowl. Add 1/2 l milk to it. Let the bread soak in the milk. Add grated chocolate to it. Mix well. Pour it into a baking plate. Set it aside for 10 minutes. 
Break 2 eggs to a bowl. Beat it well. Add sugar and continue beating till it becomes a thick cream. Add this cream to the soaked bread. Add vanilla essence and stir well.
Bake it at 160 degrees for 30-40 minutes.
Serve chilled.

Butterscotch Bread Pudding

                        

Ingredients:

Bread(cut in small square pieces without border) - 10 slices
Sugar - 3/4 cup
Milk - 3 cup
Butter - 50 g
Egg - 3

Instructions to prepare:

For Caramel sauce:
Heat a pan and add 1/2 cup of sugar. Let it melt and become a light brown colour.(Do not over heat as it may get burnt)
Meanwhile separate egg yolk and egg white in 2 bowls. 
Cross check the sugar on the flame. Give a stir for it. Remove from flame when it gets caramelised. Add 50g butter to this pan. Stir well. Caramel sauce gets ready.
Add 1/4 cup water to the caramel sauce for loosening it on flame. Remove from flame after it gets thinner.
Keep it aside for cooling.

For Pudding:
Beat the egg yolk in a bowl and add 3 cups of milk to it. Add the caramel sauce to this egg-milk mixture.
Spread butter on the surface of a pudding plate. Put the bread pieces to the plate and pour the prepared solution. Give a throughout press for it using a spattle. Set it aside.
Take the egg white in a clean and dry bowl and beat it well. Add the remaining sugar while beating. A creamy texture has to be obtained.
Preheat the oven for 4 minutes.
Add this cream to the bread pudding and spread all over and bake it at 180 degrees for 40 minutes.
Cut required pieces and serve.

Ice Cream Pudding

                       

Ingredients:

Milk - 1/2 l
Corn Flour - 3 tbsp
Egg white - 4 egg's
Powdered sugar - 1 cup
Vanilla essence - 1 tsp
Grated chocolate for garnishing

Instructions to prepare:

Boil 3/4 of the milk in a pan.
Dissolve 3 tbsp of corn flour in the remaining milk in a bowl. Keep it aside.
As soon as the milk gets boiled, add the corn flour-milk solution to it and stir continuously. Add 1/2 cup powdered sugar to it. Stir well. Remove from flame and keep it for cooling. Stir well till it becomes creamy.
Take the egg white in a bit larger bowl. Blend it well using a mixer blender. Add the remaining sugar and vanilla essence to it. Continue with beating Add the early prepared cream to this bowl and mix well. Beat again for a minute. Transfer it to another plate of any shape.
Keep it refrigerated and garnish with grated chocolate or chocolate sauce.
